my favorite summer beverage

Summer in my childhood meant variety of coolers as drinks, starting with Panaka, tandai, cashew extract, raagi milk, rose milk. But my favourite has been the Mung bean drink.


About a table spoon of mung bean is ground with a pod of cardmom and a table spoon of jaggary adding water gradually until it reaches the consistency of milk.

If this is drunk during the day for elevenses a few chips made of jackfruit accompanies this. If it is had in the evening then it is accompanied with any deep fried savoury. My favourite being rice crispies.

ಬೇಸಿಗೆಯ ಪಾನೀಯ

ಬೇಸಿಗೆಯ ದಾಹ-- ತಂಪನೆ ಏನಾದರು ಕುಡಿಯುವ ಇಚ್ಛೆ ಇದ್ದಿದೆಯಿದೆ.

ಈಗ ಸುಪೆರ್ಮರ್ಕೆಟ್ಗಳ್ಳಲ್ಲಿ ಹಲವಾರು ಆಯಿಕೆಗಳು. ಆದರು ಬೆಸಿಗೆಯೇನ್ದೊಡನೆ, ಅಮ್ಮ ಮಾದುತ್ತಿದ ರಾಗಿ ನೀರು, ಹೆಸರು ನೀರು, ಗುಲ್ಕಂಡ್ ಹಾಲು ಒಮ್ಮೊಮ್ಮೆ ಗೇರು-ನೀರು,ಅಥವಾ ಪಾನಕದ ರುಚಿ ನೆನಪಾಗುತ್ತದೆ. ಅದರಲ್ಲೂ ನನ್ನ ಪ್ರೀತಿಯ ರಾಗಿ ನೀರು.

ಇದು ಮಾಡಲು ಸುಲಭ ಹಾಗು ಅತಿ ಪೌಶಿಟಿಕ.

ಒಂದು ಮುಷ್ಠಿ ಹೆಸರುಕಾಳನ್ನು ರುಚಿಗೆ ತಕ್ಕ ಬೆಲ್ಲದೊಂದಿಗೆ ಅರಿಯುವುದು (ರುಬ್ಬುವುದು) ಇದರೊಡನೆ ಕೆಲವರು ಏಲಕ್ಕಿ ಬೆರಸುವುದಿದೆ. ಹಾಲಿನ ಹದಕ್ಕೆ ಬರುವವರೆಗೂ ನೀರು ಸೇರಿಸಬಹುದು. ಬೆಳ್ಳಗ್ಗೆ ಹತುಗಂತಗೆ ಕುಡಿದರೆ ಇದರೊಂದಿಗೆ ಕುಜ್ಜೆ ಹುರಿದ್ದಿದು ಸಂಜೆಯಾದರೆ ಹುರಿದ ಅಕ್ಕಿ ಹಪ್ಪಳ.

5gms lentils

50gms raw mangoes

Salt to taste

Curry leaves for flavour.

powder

1 red chillier

1gm coriander

1gm jeera

2gms ginger

Seasoning:

2pods garlic

1gms mustard

1gms turmeric.

Pretzels

Pretzel day:


Pretzel is a crisp biscuit, usually in the shape of stick or knot salted on the outside.

Philadelphia had a pretzel museum with its fresh pretzel stalls.

In 610 an Italian monk created this from left over dough as an reward for church going youngsters. He called Pretoria or reward. As this migrated from its origin to Austria to Germany the name evolved to Pretzel. It is symbolic of arms crossed in prayer

1510 at Vienna pretzel makers who were working in the night saved it from the attack of Turks so the pretzel was honoured by being incorporated into the emblem of Vienna.

By 1614 pretzel became part of marriage ceremonies couples break them like wishbones.

Recipe:

1 tsp yeast

1tbsp. brown sugar

2-3 cups of all purpose flour

1 tsp. water

1cup warm water.

Mix 2 cups of flour with all the other ingredients and knead till a smooth dough is formed adding rest of the flour only if required.

Keep aside for an hour and then divide to 6 portions roll into stick, leave it for 5-10 mnts now knot it and dunk it in boiling water for 5 secs sprinkle coarse salt and bake it in a preheated oven at 425o for 12-15 mnts.

carrot day


A natural carrot top Archie or a created one by covering the greys with mehendi. Carrots are great, good for your eyes, good for your skin blah! Blah! Even the nursery rhyme goes carrot stew.
Well the long and short of it is today is the carrot day, and also the carrot cake day. It is believed at
An average person consumes 10,866 carrots in a life time, Christ someone counted it.
A carrot top need be orange; it could be purple, white red or yellow.
Rabbits are known eat carrots during the breeding seasons, and its believed that dreaming of carrots means early marriage and lots of kids.
So, today, we are celebrating all things with carrots.
Carrots are also packed with antioxidants vitamin K and C and best known source of vit.A.
Interestingly many British kids believed that carrots grew on trees.
As a ritual it is a take off on a medieval ritual where carrot pudding was enjoyed. Europeans brought carrot to America and the ritual was revived in the 20th century with carrot cake and cream cheese frosting. Earliest recipe of this is recorded in a 1960 recipe book.
I was thinking of the Indian adaptation of this vegetable into kosumbari the dry salad,Rasam and Halwa.

Honoring the peanut butter.


My kids seem to really love it. Making it is very easy,
1 ½ cup of peanuts roasted
1 tbsp. to 4 tbsp. of peanut oil.
Variations of consistency and presence of peanut butter has been seen in Chinese, Asian, and African civilization. Though the earliest presentation in its current form was developed in 1895 by Dr.John Harvey Kellogg.
My favorite dish with peanut butter.
Kofta’s in a jiffy.
½ cup peanut butter,
2 slices of bread,
1 tbsp, scraped dry coconut,
Salt and pepper.
For the gravy
Two tomatoes
Cups of coriander leaves
4 green chilies
2tbsp of khuskhus soaked.
2tbsp. of coconut scraped.
2tbsps. of garam masala.
A pinch of turmeric.
Salt to taste
Jaggary/sugar taste

Mix the ingredients for the kofta,  divide into small portions and keep aside.
Grind tomatoes, coriander leaves, chilies, Khuskhus coconut  to a fine paste.
In a wok heat about a 1tsp of ghee, add a tsp of Jeera seeds, when it  pops add the ground mixture, as the mixture changes color add salt, turmeric, jaggary/sugar, and garam masala. Add water to bring it to your favorite consistency. Now add a ¼ cup extra of water, bring to a boil.
Arrange the kofta’s in a shallow serving dish, pour the gravy and dress with finely chopped coriander. Serve with rotis,puri’s naan’s butture, or kulchas.

manchurian parata

Manchurian parata
2 cups wheat flour
¾ cup shredded cabbage
¼ cup shredded carrot, capsicum,(onions optional)
3tbs. Manchurian sauce.
2 tbs cooking oil.
Salt to taste
Oil to shallow fry.
Water to make pliable dough.
Method.
Mix all the ingredients to make pliable dough. Keep aside for 20 minutes covered with wet cloth. Then divide into 16 – 20 equal parts. Roll out.
On a hot skillet, drop a drop of oil, place the rolled parata, when it roasts turn over. Please apply oil before turning over. Repeat for the rest of the paratas.
Serve with any Chinese dip.
